This is one of those concoctions that can get a major side-eye. Avocado… and chocolate? But, YES. It’s a match made in a fat-lovers healthy heaven. This pudding is rich, creamy, filling, and so easy to toss together. It has a perfect pudding texture, deep dark chocolate flavor, and just enough sweetness. Bonus! It’s got enough great stuff in it that eating it (all) as a snack is actually pretty brilliant.
It’s my favorite late night treat to eat while watching TV in bed, best with a cup of spicy tea on the side. Also, note: current favorite Netflix binge watch shows? Love Sick and Easy, both were just the right amount of “whoa, that’s just like real life” and break from my actual real life. But both are adult content, not a good show to watch with kiddos near. But if you want something that all of you will love – a new season of British Bake Off is up (!!) and it basically consists of my entire plans for this week.
I adore this recipe for many reasons. But one of the biggest is that it’s a great one for bananas and avocados that are about to be too ripe to eat. And, honestly, for me any banana that isn’t basically green is too ripe. So, there’s that.
Chocolate Avocado Pudding
Ingredients:
2 very ripe avocados
2 frozen bananas (or, ripe and unfrozen, but then pop your concoction in the freezer for an hour before consuming)
2 Tbs unsweetened cocoa powder
1 Tbs honey or maple syrup (or date syrup, or a few dates, or no sweetener at all!)
2 tbs nut or seed butter
1/2 cup almond or coconut milk
Directions:
Blend, blend, blend.
Also, FYI, this makes for a totally acceptable breakfast topped with granola or nut’ola. In case you were wondering. It also goes perfectly with a cup of black coffee.
