The sun is out in Bham! As such I’m peeling off layers, laying in my backyard with a new book, and planning all the camping trips our calendar can hold! Icee’s, sunny day’s, and fresh melon are calling! Spring in the PNW starts in fits and bursts, and on those random 65+ days our whole family is filled with wide smiles and hearts primed for adventure! I started whipping up these easy icee’s as a way to meet the desire for something cold and refreshing, but still a little nourishing. Also? Takes advantage of my wild-mint crop that grows so enthusiastically not even our mower can keep it down!
Spiking these with a little extra melon, and collagen, makes them a nutrient dense snack that helps my kiddos gut health, and hydration in one fell swoop. My favorite thing about this is that it works perfectly as a popsicle, a drink on it’s own, or layered with this mind blowing iced matcha recipe I’ll be sharing later this month!
This recipe relies on the sweetness of fresh watermelon, and it’s high water content! We picked this mint from our yard, but it’s also available at most major grocery stores. The melon collagen is a new Vital Proteins product, and we’re loving it and it’s really fresh flavor. I added to packages to this mix but you could easily add more if you are looking for more of a protein and nutrient boost.
1/4 Ripe Water Melon
4 Fresh Mint Leaves
2 Packages Vital Proteins Collagen Beauty Water (melon)
Blend, blend, blend!
Pour into popsicle molds!
With the rest of the liquid left, add a handful of ice and blend!
