I often brew matcha into tea, bullet-proof, chia pudding, or into a smoothie for some extra antioxidants and energy. But mixing it with cacao, and nuts makes it not only a little boost of caffeine but also full of protein, calcium, iron, and a natural mood elevator.
These bites come together quick, easy and are pretty as a two layer bar or (my fave) rolled up into an easy to grab ball. These pack a chocolatey punch and store well in the fridge or freezer. They’re a perfect 3pm OMG, KIDDO’S PLEASE STOP FIGHTING WITH EACH OTHER treat. . . Or, I mean, what?
I like to make them in two separate (the chocolate and matcha) batches so that you can see the green, but you could easy just do it all in one blend so make your life easier. I won’t fault you, and it’ll still taste amazing and treat you well!
RAW VEGAN MATCHA BROWNIE BITES
15 pitted dates soaked in hot water for 5-10 minutes
1/3 cup walnuts
1/3 cup almonds
(feel free to swap out for another nut if you have an allergy, or abundance of another in your pantry!)
1/4 cup cacao powder
1tbs hot water
1 tsp salt
BLEND BLEND BLEND
1 1/2 cup cashews
1/2 cup unsweetened coconut shreds
1-2 Tbs Matcha (depends on how strong you like the flavor!)
3 Tbs Maple Syrup (sub for honey if you prefer!)
1/2 cup coconut oil
BLEND BLEND BLEND
At this point you can decide if you’d like to layer, in an 8X8 greased (or parchment lined) pan, or scoop a tbs of each mix into your oiled palm and roll into balls. Either way, store in the fridge or freezer, and serve chilled!
Both of these layers are stellar on their own too, and the brownie base is one I use to mix with lots of flavors, or to use as a base/crust for raw cheesecake too! Soaking the dates will help them mix far more easily, and give you that carmella consistency that is so decadent and amazing.
I’m a big fan of the OrganicEvo Matcha because it’s so smooth, not bitter, and mixes in perfectly to bars, bites, or balls! I’m having to fight the urge to mix it into everything today, while noshing on these bites, because I’ll leave myself bouncing off the walls!
Pro Matcha Tip: I hated matcha until I realized that a little goes a long way. Sticking with a teaspoon in any drink/single serving creation! Otherwise the flavor is too overwhelming. Remember that it’s already highly concentrated so a bit will give you a big boost!
