Trader Joe’s has been KILLING it with brand new awesome items. Their gluten free and vegan options are out of control! I’m going to need to update my Shopping List Post soon! One of the items I loved the taste of most was the new Caulirice Stuffing, it was spot on flavors, but had a few ingredients I wasn’t super crazy about. So decided to whip up a simplified Whole30 Friendly version, and it turned out INCREDIBLE. And easy as can be.
I’ve made a handful of Gluten Free Stuffings before, and honestly, they were all pretty amazing because the dryness of gluten free bread is actually pretty stellar for stuffing. So if you are GF this Holiday season, don’t fret! A traditional stuffing is still totally within reach. However, if you are wanting something a bit more veggie heavy, or if you have more food limitations that GF bread can accommodate, give this a go. It’s easy, speedy, and tasty.
Trader Joe’s Copy Cat: CauliRice Stuffing
- One bag caulirice; 3 cups
- 1 diced yellow onion
- 3 celery stocks diced
- one pomegranate worth/one container pomegranate perils
- 2tbs olive oil
- 2tbs veggie broth
- 3tbs. roasted or raw pumpkin seeds
- optional; 3 chicken sausages
In a medium hot skillet add oil, onion, celery, and finely chopped spices ( fresh or dry!) Sauté until onion is translucent. Add in cauliflower rice, pomegranate, and broth. Cover and let steam for 4-6min, uncover and stir well. In a separate pan chop sausage into bite size pieces, toss till brown. Mix into stuffing mixture, put all into a bowl and top with pumpkin seeds. Serve warm.
This is perfect as a Thanksgiving or Christmas side, but is also a nice addition to any protein, or as a quick and easy complete lunch!
