I’m writing this with a tan. A few hours of sleep. And some sand still in my hair. We just got home from Kauai yesterday and the laundry is humming along, grey skies of Bellingham are full of clouds, and all I can think about in my post red-eye haze is the muffin we ate endlessly on vacation, and how if I can hold on tight to that… and all the bigger lessons this vacation taught me (more on that soon), I’ll be one happy woman.
Several day’s we enjoyed coffee and pastries at various cafe’s around the island, but we kept coming back to the same shop. The coffee was perfect, but more perfect was the Morning Glory Muffin. Gluten free, ridiculously moist, and FULL of extra goodness that helped me feel full at the beach and able to stay…. uh, regular? (and THAT is a godsend on vacation)
I came home and immediately decided to whip up my own version, and bring a little of our trip home with us. I added in some extras, like flax, apple, and Nuzest protein powder. I wanted these muffins to be sustaining enough to fill me up for a big river play day, school adventure, or sunny beach excursion. So? Extra protein.
These muffins are a god-send. They’re not finicky, come together quickly, are easy to add to (raisins, chocolate chips, nuts, go wild!) based on your favorites. Also, GF/kid friendly and filling AF.
Gluten Free Protein Packed Morning Glory Muffins!
- 2 Cups Gluten Free Flour Mix
- 1 Cup Brown Sugar
- 1/4 Cup Ground Flax Seed
- 1/4 Cup Vanilla Nuzest Protein Powder
- 2 Cup Shredded Carrots
- 1 Shredded Apple
- 1/2 Cup melted coconut oil
- 1/2 Cup Apple Sauce
- 2 tsp. Cinnamon
- 2 tsp. Baking Soda
- 3 eggs
Directions: Preheat oven to 350 degrees. Mix together all ingredients into large mixing bowl (again, it isn’t finicky!) Spoon batter into prepared muffin tin (either coconut oiled or buttered, or lined. I prefer lined and sprayed with coconut oil for maximum ease! Heap into muffin tin, use all the batter to make 12 big muffins. Bake for 22-25min, cool, and enjoy!
These muffins are easy, keep well in an airtight container, and go perfectly with a hot cup of coffee. I plan on adding some sweet frosting to the top tomorrow am to make them extra kiddo enticing (and, like, me enticing too) as an easy, filling, protein rich breakfast before school tomorrow!
